Greetings

The features of Japanese sake changes in many ways during the brewing process. When the sake is just made (a stage referred to as “tarekuchi”), it has a slight fizz and fresh flavor. This sake is made in the winter and then kept in the tank throughout the summer. As the season turns to fall, a more profound flavor develops. The characteristics of sake can greatly vary. Sakes that mature quickly are shipped in advance, while young sakes are aged for one or two years to build on their flavors. While some sakes can be slightly more difficult to handle, they are also important products which the brewery handles with care, and eventually shipped when their qualities settle. Our mission and joy is to bring out the finest quality of these diverse sakes we produce, and deliver them to our customers.
